Executive chef Elia Herrera, originally from Veracruz, draws on her grandmother's recipes to introduce locals to the great variety of Mexican cuisine.
Chiles en Nogada, for example, happens to be chef Elia's favourite. It is a flash-fried poblano pepper stuffed with pork piccadillo originally created to represent the colours of the Mexican flag for Independence Day. "My grandmother was famous for the way she made chiles en Nogada," says Elia. "I'm very proud of it. It keeps me close to her."
